Ingredients:
- 1 medium-sized butternut squash
- 2 tablespoons butter, olive oil can be used as replacement
- 1 small onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable or chicken broth
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup heavy cream or coconut milk (for a dairy-free option)
- Salt and pepper to taste

Instructions:
1. Preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop
out the seeds. Place the squash halves on a baking sheet, drizzle with olive oil, and sprinkle
with salt and pepper. Roast in the oven for about 45-50 minutes, or until the flesh is tender.
2. Once the squash is cooked, let it cool slightly, then scoop out the flesh and set it aside.
3. In a large pot, heat the butter/olive oil over medium heat. Add the diced onion and minced
garlic, and sauté until they become translucent and fragrant.
4. Add the roasted butternut squash flesh to the pot, along with the vegetable or chicken broth,
cinnamon, and nutmeg. Stir well and bring the mixture to a boil. Reduce the heat to low, cover
the pot, and let it simmer for about 15 minutes.
5. Using an immersion blender or a countertop blender, puree the soup until smooth and
creamy. If using a countertop blender, be sure to blend in batches and be cautious of steam
buildup, this will cause pressure and blender lid might pop off.
6. Return the soup to the pot if necessary, and stir in the heavy cream or coconut milk. Heat
gently until warmed through. Season with salt and pepper to taste. Don’t be afraid to

7. Once the soup is heated, serve it hot and garnish with fresh herbs and a drizzle of cream, if you fancy.
